    Agreed, I've made nearly 400 loaves of sourdough over the last five years and no two have come out the same, or even close to it. :)

    These bakeries claim water, flour, salt and that’s it. Hmmm….ok well the starter is the same ingredients

    Wife says bakeries use dough conditioner. I don’t know

    Evening all:

    "WAS" planning on going to go up to the river tomorrow and fish for shad, I have a tackle box/bag just for shad fishing with most of my flutter spoons and a good variety of darts and other stuff in it, couldn't find it after looking through multiple tackle boxes, finally on the second go round, I found it, I somehow overlooked it the first time. :facepalm:
    THEN, I was looking for my stash of hundreds of shad darts to replenish my go to colors, couldn't locate them either, I finally found them also, in plain sight, but not where I had been looking! :annoyed:
    I haven't gone for shad in a while, either I have to go more often to remember where my stuff is or just get more organized! :rolleyes:

    Not all conditioners are unnatural but yeah

    Honestly sometimes I over use olive oil for example nothing too weird outside my crazy starters

    The buck shad run smaller than the roe, roe shad that have been winning the local shad contest for the last few years are in the high 5lb. range and around 22-24 inches long. Years ago you needed an 8 or 9 lb. shad to win, probably around 27+ inches, don't know the reason why they aren't as big as they used to be. They are fun to catch and put up quite a battle in the river current, biggest one I ever caught was 27 1/2 inches long, and that was years ago.
    As for eating, they aren't that great although some people do like them, plus they are really boney, years ago a guy smoked some for me and those were actually quite tasty. Some people only want the roe from them, and you can actually buy it in stores supplied by a commercial netter on the lower river, I'm not a fan of that either!

    Understood, I used a little olive oil when I made bread a year or so ago with a bunch of rosemary and garlic cloves, but that's about it. Speaking of starters, I recently bought a new starter called "Bavarian Black Death" which allegedly dates back to the year 1633 and has been maintained by a single family for the last nearly 400 years. I have yet to reconstitute it so I cannot tell you how well it works; I'll let you know when I do.
