    The porch is covered but rain snow does come in from sides.

    Hickory you know by now is very strong and tough but will surface crack, check. Maybe ok in your situation, but varnish - maybe not best choice.

    Take a look at something that is easily smoothed and sanded again yet food safe. Hard wax or https://www.realmilkpaint.com/category/oils/

    Good to know about hickory. I put a strip of it into a board for my brother but that is an inside piece and coated in board oil and board wax. Time will tell.
