Made a small jar of pickled onions and now I'm looking for excuses to eat them with everything... Had them in a Caesar salad last night and a cheddarwerst tonight... They went in my green beans night before last. I'm not looking forward to the busy night this week we decided to just have cereal or something, it's gonna be a weird combo

I've had an itch for some peanut chicken so I hunted down a sauce recipe tonight. The brown on brown on brown isn’t very photogenic but it tastes good.

Is this a recipe worth sharing? Is it a spicy sauce?

Someone on Reddit linked to this one. I figured it was as good as any to try.

    https://cookieandkate.com/peanut-dipping-sauce/

It wasn't too bad. My proportions were likely a little off since I made 1/3 of a serving so I didn't really measure some of the ingredients. I cut way back on the water as I wanted it more of a sauce than a runnier dip.

Spice-wise, it definitely could have been hotter. Maybe hot honey instead of regular honey?

I used to go to this little hole in the wall Thai place years ago when I worked in Tampa. They had this stuff I can’t remember the name but I called it peanut butter chicken. Was like sliced up chicken in a slightly spicy peanut butter sauce. Wonder if I could use this to recreate. Was one of my favorite things they had on their little buffet.

Was the peanut chicken called satay? It's usually served skewered.
I've done a quick chicken peanut butter sauce with BBQ sauce, peanut butter and lime juice. The recipe I tried called for 1/3 BBQ, 1/3 PB and 1/3 lime juice, but I cut the back a bit in the lime juice when I make it and add some chili seasoning for some heat.
There's also an Indonesian dish called gado-gado that uses peanut sauce, but it's a mix of blanched and raw veggies and sometimes hardboiled egg.
The local grocery stores sell bottled peanut sauce. I've had the Tsang sauce before but not the other two. The Tsang has some heat to it, but not much.

San-J is available in several places. Viet places also regularly serve similar with spring rolls. You really can’t go wrong.

So my wife found a video of a lady who fried some cabbage wedges and then fried up onions and made a roux and a bechamel and Parm I'm pretty sure and then added the wedges back and covered them with the sauce and baked it ... We didn't have an onion so I substitute a elephant garlic and added bacon, it's kinda weird, but cleaned my plate... Like garlic Parm gravy and biscuits without a biscuit. If you like fried cabbage and bacon, this is probably up you're alley.
