Appreciate the help. I won't ever put a pic of myself up, that would constitute cruel and unusual punishment.

Forgot to take a glamour shot of the round roast that day. It came out good, sliced for sandwiches, as planned. Super-fast cook. Under 3 hours. Would do again, for sure

Chuck roast, around 2 hours on the smoke and 2.5 hours in the braise pan.

Superdave’s pit boss 850 upgrade tips:

I pretty much only use the top rack on my pit boss. Bottom is too hot, even with a fire pot heat deflector. Problem is this smoker has a tiny ass top rack.

I bought a grill grate made for a charbroil grill, after much searching found the dimensions I was looking for.

New top rack is slightly too wide. I had to cut it down unfortunately. Also it is flimsy, so I have to run the old top rack below it.

Everything fits really nice and easy to insert/remove. I have WAY more top rack space. Worth the $30 gamble!

Did a little jalapeno experiment. Couldn't really taste them, I'll probably put some of the juices in the wrap next time as well. Both came out amazing though.

Do you have room to add another level above the top rack? Lay some firebrick down and add another rack above depending on the cook. Maybe smaller rack? I used to double up a rack on my Weber kettle by spacing with nuts bolts/allthread to add4” or so for ribs.
