    I get all of that - the espresso machine is very similar, similar variables
    Too much pressure [aka ground the beans wrong/tamped too much/too many beans] = over extracted and bitter
    Too few beans/ground too coarsely = not enough pressure/not enough time passing thru the grounds = watery and sour

    Since I started roasting my own beans, I have had zero consistency issues
    Sometimes it takes a cup or two to get it dialed in but otherwise..

    That time post/roast, as the beans degrade is the most important
    If the beans are more than a month past their roasted date [or the beans themselves were REALLY old] - then it screws everything up

    The baller grinder I have makes a big difference too, which is why I $$ for it

    Interesting. That's a lot of work :p I just like trying different roasters and beans - cofermentation is my favorite. But you're right about how espresso works. The grind and the temperature are critical.

    Ha. There is a shop I believe in Pittsboro that does pourover it's on the main drag. I think it's Aromattic Roasters.

    I used to do this but then the roasting/time since roast started causing inconsistent results - to the point I'd have to throw out a few cups worth; it became wasteful and expensive in comparison

    I also used to order several different types of beans - but now I just stick with a few that I know are good

    I did like the pseudofermented beans tho - they always have such a unique taste

    I've been there a few times, I suppose they do - Cup22 in Sax probly does too

    But then I'd have to go to Pittsboro
    It has changed drastically and I slowly watched all the old businesses and their owners get forced out by the new wave of fucking libertard transplants that are slowly ruining the county
    Now it is full of wanna be Karens, their twat kids and their husbands, drinking desperately to escape the fresh hell they have found themselves in
    I would rather go to Siler City and smell the chicken processing plant
