    This is straight from abuela running a taco truck for 20+ years. Similar to a braised short rib: sear the meat, remove and add your inclusions/broth, add the meat back to braise, remove the meat and shred, blend the broth (not the herb sachet).

    That’s the traditional birria soup served at weddings. Drag your tortilla in the fat on top of the soup, place meat/cheese/onions/cilantro on the tortilla in a hot skillet, fold and flip until crispy. It’s a labor of love… happy add more detail as necessary.

    I've learned one thing from going through my wife's grandmother's recipes - if they aren't stained in grease splatter and food residue, they weren't keepers!
