    Dak - Coffee Roaster from the Netherlands
    Big Apple - the coffee
    Cofermentation - a process used when roasting beans - in this case - the beans are cofermented with green apples.


    The cherries are soaked in water for 2 hours. Initial carbonic maceration for 72 hours is done to collect the mossto. The mossto juice is a cultivation starter with a inoculated yeast, a solution of glucose and amino acids. This juice is infused into the coffee after pulping, leaving 60 % of the mucilage with a mix of dehydrated green apples in a second fermentation submerged at 30 % for 72 hours. The coffee is sun dried on African beds for 15 days with a humidity around 10.5%. The parchment is stabilized for 8 days with the dry pulp then the coffee is finally stored in grain pro bags. After final stabilization of 8 to 10 days, the coffees are cupped and the lots are organized.

    Specialty coffee, roasted in Amsterdam - Dak Coffee Roasters

    It's glorious. It's not artificial tasting despite the name - it's black coffee with a slight sweetness and hint of green apple, it's subtle.

    Dak is a heavy hitter in the 3rd wave coffee game. Much like Manhattan (Netherlands), Onyx (Arkansas) etc.

    Latest pickups. The September is on 11 days rest, not quite there yet. I've only brewed one test cup. The juicy flavor is there but it will be much more pronounced after more rest.

    The Brandywine is def fruity, juicy, sweet and has the peach rings/candy influenced flavor.

    Brandywine is big on cofermentations.

    I only drink light roasts, even light mediums are too dark for me.

    Brandywine is always dropping new coffees too, like weekly, which is insane.

    Just chiming in here - I own a coffee roastery and used to have a coffee shop, so yeah, I'm a huge coffee nerd lol

    At this point in life, I'm a one cup a day guy... Hario V60 pour over. I'm kinda over a lot of the trends, especially co-ferments and highly processed coffees that overshadow the inherent flavors of the bean. I do love clean, fruit forward coffees though.

    Yeah, Ethiopia and Burundi are probably my two favorites. There are some killer Burundi this year.

    Technivorm makes great stuff for sure!

    My home roaster is Bullet, little electric drum roaster that I hook up to my laptop. I could plug it into the outlet in my truck if I wanted to! Haha... Actually that ain't a bad idea for a cars and coffee meet..

    Oh sweet, sounds like nice setup with plenty of power. A lot of home roasting setups have too long of roast times, so you end up with flat (baked) flavor profiles.
