    I appreciate any tips and any rub recipes you all might have..:D been doing some reading and learning as we go.

    We used mesquite chunks...they didn't have many choices on wood, so we have to figure out a better place to buy a variety of wood.
    Those beef ribs were less than $6 ;) and fed the 2 of us well! Had the pulled pork for dinner last night and it was yummy, definately going to be making that again.

    This was our 2nd time smoking and we are still learning, but this time went a lot better and easier than the 1st time.

    Might be making some ribs tonight. I am going to slow roast them in a honey,bbq sauce, maple syrup, brown sugar very sweet and wet sauce on 250 for around 4 hours then finish on the grill. Hope that they come out good, I will take pictures.

    Dry rub

    1/2 cup ground black pepper
    1/2 cup paprika
    1/2 cup brown sugar
    1/4 cup salt (kosher)
    4 Tsp dry mustard
    2 Tsp cayenne

    rub into meat, let stand at least 1 hour, cook meat low and slow
    excellent for ribs

    Just checked on the ribs after 90 minutes at 250. Lowered to 200 for the next 90 minutes. The sauce pretty much baked into the ribs with lots of nice drippings that I am going to reduce and baste the ribs with when I grill them.............. cant wait.

    The last 1/3 of the rack is already made into pulled pork. I added some of the sauce for tonight's dinner. That will make for some good sandwiches for lunch tomorrow. Breakfast is going to be skirt steak with farm fresh eggs on toast with mango salsa. Served promptly at 7:00 am........ see you guys then.
