for your sake i hope so as they are so amazing... we've gotten to the point where we almost always use shitaki's or portobello's. white mushrooms have very little, if any, flavor. i've got to have them on a pizza like this one we made the other day....

very nice shot!! When I cook steak, i have to go to the butcher and get them myself, after that I trim them myself, then let them get to rom temperature, salt and pepper then place them on the hottest grill I can find. Amazing!!!

I was just curious, what is the whole purpose of letting the steaks get to room temperature then cooking them? I hear it all the time but dont know why?

good! gotta let them get to room temp... the grill i have is a POS quality-wise, BUT it gets hotter than hell. It's got some TEC infrared grills on it that get insanely hot. I almost always grill them on cast iron though, I love the crust it creates.

Its supposed to be to get more even cooking, which doesn't make sense. I do it because my grill gets up to 600 F to 650 F by the time I put the steaks on and i don't want the outside to be completly burned by the time its medium. though I tend to through my own steak in the freezer a bit before I grill it. I eat my steak so rare its still mooing!

Luckily, the market by our house carries high quality meat (choice and prime). It's a small, specialty type market. There's also some butchers nearby. My wife and I are trying to eat less red meat, and eat grass fed when we do, but it is more expensive.

Here i don't mind going to the grocery store to get steaks, it takes me 10 minutes to choose them though. Where I went to college there was a great butcher in the neighboring town I went to alot. He was the best Aussie butcher I ever met. his beef was amazing. also made his own sausages, beef jerky, and bacon. Definatly the best butcher i have ever known.

I've noticed the bigger markets here have been carrying better grade beef lately.
