i found the wheels i want they are an 18x9 but seem to be only offered in a zero offset. the tires are either a LT275/70R18 or LT285/65R18. i have a 3" skyjacker lift. will i be OK running this set up and which tire would require less trimming?

You can make that work. The guys who have rockstars run 285/65/18s with only 5" bs. Because the wheel is 9" wide it pulls the tire far enough from the uca.
