    It is expensive, but considering a 3 oz pack of jerky is like $6 in the store, that's like $30/lb. I made around 2 lbs for $20. Sometimes I beg a deer roast off my hunting buds and then it's basically free.

    I've tried to make jerky off of a cheap cut of meat but usually roast has so much fat and connective tissue in it that the result is really greasy and it goes rancid quickly. Deer of course has very little fat in it and is great for this.
