Sorry if this is a real rook question, but I can't seem to figure it out.

The 2 kits I'm looking at are as follows:

(Bilstein Adjustable lift kit with 5100 shocks ) or

    (Down South MotorSports)
    http://downsouthmotorsports.com/i-8...stein-5100-series-ride-height-adjustable.html
    (With AAL)

A few bucks different, but what do the new coils add? what pro's and cons from running the new coil.

Also, when would I need Adjustable Coilovers?:
(3" lift kit with Bilstein 5100 Height adjustable Coilovers)

The eibach springs paired with the 5100's will offer a smoother ride than the 5100's with preloaded stock coils.

I'm still trying to figure out exactly what the difference between the two products linked above is, other than that the second one comes preassembled.

The 3" kit has a thicker top plate, that's why it comes preassembled. Otherwise, just setting the 5100's to .85 and throwing Eibach coils on them will leave you shy of the 3" mark.

That last link in the OP is NOT an adjustable coilover in the true sense of the word. To adjust the ride height, you'd need a spring compressor to disassemble the coilover assembly, then move the coil seat down a notch, then reassemble. When I think adjustable coilover, I take that to mean adjustable with a spanner wrench. The title on those is misleading in my opinion.
