    I don't see how that could be rude - I'm not the one who made the dish. You mght consider your source if you feel your fillets are bland. I'm not saying I buy Wagyu beef, but a grass-fed Missouri fillet from the local guy is going to be much better than the Kansas feed lot corn-fed stressed out cow meat. If your fillet truly doesn't have enough flavor to be enjoyed with a nice sear and some salt and pepper, that's a sad situation.

    Boom. Nice. Are Louisiana oysters caught locally? I don't know anything about oysters except that the season for them in the northeast is fall/winter. I'm curious how that works w/LA oysters.

    Yeh. Pretty much any of the good seafood here is Local. :D

    We can pretty much get oysters year round here. They're not as good in the summer, but we're usually eating crawfish when we can't get oysters. :)

    Did you take these pics? Besides the food looking great, these are great pics. Great presentation, contrast, color, etc. Very nice, only thing would have been to have the beer label facing at an angle toward the camera, but that is for another thread. Had some crawfish last night, love this time of year!

    Yup. I've been trying to hone my skills. I used to make pizza every week but it's been years since then. The one last week was good but this one was much better. I've been modifying my dough recipe and I think I've got a good one now.
