I have a 2012 4x4 and have the stock 245/75/16 dunlop tires. Also i have the 5100's set to .85" in the front and stock rear suspension. Im looking to replace the crappy dunlops with some General Grabber at2 tires. I dont need 33's but i am wondering if i should go up in tire size an inch or 2 and get my guages recalibrated (where and how much would this cost?) or stick with the stock size? i dont do any hardcore off roading but do pull a boat and hunt.
im thinking of going with 255/75 or 265/75

There are plenty of members running the 265/75/16 with no lift at all, zero rubbing.

i dont need to go up to a 285/75, the 265 will do just fine for me. im also trying to consider mpg. which is why im not going with the duratracs again, the grabber at2's should drop me more than 2 mpg

IIRC, I think 265/75 on 16s will be closer on your speedo too, plus there are plenty of tire choices in this size.

Wtih 265/75/16s you will have no rubbing, your speedo will read correct but your odo will read less than actual.
When I run the 245/75/16 Dungflops my speedo reads 2 MPH more than actual (odo is corect) & with my 255/85/16 BFG KM2s my speedo reads 4 MPH less than actual. I put my GPS in info mode for MPH and miles on a tank.

not with only 0.85 of lift and stock wheels. There would be rubbing on the control arms, and lots of plastic rubbing at full lock or when the suspension flexes.

I know this is kind of old, but the FJ Cruiser Trail Teams comes stock with load range E BF Goodrich AT's and to me they felt as smooth as anything out there. I liked the ride more than I liked the ride in a stock 17" wheel with the road tire they put on the base model FJ's. The setup is basically the same between the FJ and the Tacoma, so I don't think running an E rated tire is as big as a deal as people think. Plus airing down and such wasn't a scary deal, nor was it a big problem to tow something. I loved the E's. The vehicle never felt floppy. I owned 2 FJ's and had the E tires from the factory and then a 4Runner that had the C load tires, and I disliked them a lot. The tires felt floppy and like they were ready to tear off. That was probably because I was used to E's of course. But... I've had 3 leg operations, 3 spinal fusions, and hip surgery over the last few years, and if the 'E' ride didn't bother me, I don't think it will bother anybody honestly. It felt smooth and let the suspension do the work, but also there was a tire on there that had some heft to it and didn't feel weak and shaky. I'm going to risk throwing a set of the Grabbers on my Tacoma as soon as I can afford it and probably be proven wrong here (I know the FJ's ride differently than the Tacomas and are heavier, boxier, blockier, etc. etc.) but to me... I don't think they are anywhere near as bad as folks make them out to be in ride quality when switching from a C to an E.
