    I tend to leave the fat on but it is typically personal preference. If there isn't much marble to the meat (like on a pork loin) They will get dry with out any fat. To fix that i will add a few strips of bacon to the top.

    I like to do boneless turkey breasts and slice it for deli meat. The problem is they dont' have much fat and dry out. I will also do a pork shoulder above it and let the drippings from the pork baste the turkey.

    Damn, I think I need to fire up the smoker next weekend. I'm getting really :hungry: talking about this.

    Agree with everything you said about the low-fat meats. I'm actually going to do a turkey breast this weekend for the same thing (deli meat).

    I'm pretty sure my smoker is becoming one of my favorite possessions.

    Mine definitely is. I love the weber. It is so easy to use. The only thing i see as an issue is it needs prep time. The meat will typically need to be prepped a few days in advance. I can't just go use it on a whim.

    Yeah WW anytime you roast or even slow cooker a piece of meat fat side up. You guys are really talking me into getting a smoker. I have read so many reviews for gas,electric, propane,wood etc...I dont know where to start.

    Go with the Weber. You can't go wrong. Their design hasn't changed since they introduced it. My dad has one that was the first or second year of the WSM. The only difference with mine is i have a larger water pan (added in 2009) and a thermostat in the lid.

    Ok I can handle charcoal. I will have to look it up, thanks. Maybe that will be a birthday present to myself.

    My wife got it for me on our anniversary a few years ago. It is a very good design. There is also a TON of info out there on how to use it.

    I got mine on Amazon. I've never really seen them go on sale, so it probably doesn't matter when you order. I got the 18.5 inch version (smaller one) and it's still big enough for at least 2 (probably 4) pork butts or a turkey and a couple butts. Plenty big for me.

    Yeah I will just have to get the biggest one out there, I cook for a lot of ppl and I have the slicer so I will be using them both alot. I love leftovers also, thats usually my lunch

    go check them out. I have the 18" weber and I can get about 40lbs of pork shoulder in it. The 21" is HUGE. I bet you could get 100lbs of pork shoulder in there.

    Last time I had a beast day, mostly meat dinner party. I had close to 2 lb of meat a person and there was about 40 ppl there.

    Going to do some research, maybe try to find a meat smoker's forum and try to figure out the best all around product.

    I just bought a Weber grill. It doesn't matter where you buy Weber the only $ you will save is sales tax if you buy on Amazon. If you buy a Weber anything locally they will assemble it. On amazon you assemble it. Not much assembly on a smoker but there is a little more to a grill. BTW if anyone reading this is interested in a grill - Home Depot gives you cast iron grates instead of stamped metal. If you buy cast iron grates as an upgrade it will cost you $65. I apologize for kinda highjacking the smoker thread but thought this might be of interest to some.
