    Colin,
I know you do extensive off roading with your taco

Can u run the AC while riding slow trails in the heat of summer.......without your taco heating up ?

If I do my AC will actually cut off and start blowing hot air !

Build thread in sig... 4-link long travel
I've never had an issue with overheating on trails, with or without ac. I actually have only ever seen my temp needle move above the mid point once. it was on july 5th. scenario was:
    -105 degrees
    -humid as hell
-truck weighs a lot and is not aerodynamic
    -pulling 6000lb boat <<<<<
-highway speeds <<<<<<<<< makes for running constantly in 3rd and 4th gear
    -hilly highway <<<<<
-3 other people in the truck plus gear
-trying to shoot icecubes out of the ac

so with all of that going on, my temp guage hit 3/4 of the way up (normal is 1/2). i was able to lower the temp to just above normal by turning the ac temp to the lowest setting, an was able to get it to run at normal engine temp with the windows down and heat on.

sooooooo, in conclusion, i have never had an issue off road in any type of terrain with any combination of ac/windows. I don't think i will ever have to work the truck harder than i did last week, meaning it shouldn't overheat again. and there is deffinately something wrong with your cooling system.

as for the ac actually shutting off, i had the same thing happen back at the august 2011 ocala meet we had. went to the autoparts store and got one of those coolant recharging kits, and haven't had an issue since. that's not related to your engine overheating issue though.
