Your location seems pretty prime though especially with all the regulars.. Don't stray too far! Good luck finding a chef in this day and age, anyone who thinks they can hold a pan thinks they deserve to be paid like a movie star.

I'm glad buisness is booming! Start exploring other foods... Soups for winter, ice creams during summer. If you don't have it already then make sure you have FRESH squeezed OJ for the morning crowd and charge $4 bucks a glass that they end up downing in 4 gulps because it's so delicious.

    Keep us the success

    lol, right on man.....

I will tell you that 2 struggling restaurants have approached us asking "how do you do it?"

Also, being a local celebrity can be a chore. I need a better disguise when I go out. ha

I work in a cafe/bakery in the upscale part of Marin county. We buy oranges by the box and hand squeeze them every morning. People suck it down.

fresh squeeze OJ is the best..but i can only drink a small glass.

people that guzzle huge glasses of the stuff must be rich..and love all that juice. that is alot of calories..just to pizz out all the extra Vitamin C.

Way cool! So what brings you up to Idaho?
Man that's WAY cool that you'r place is booming and doing to dam well! 40-60 min wait:eek: That's impressive! How did you get the word out for the place to become so popular so fast? It's gotta be the incredible food and great prices. I would love to work in a kitchen like that, and live up there for a little while. But sadly school takes precedence.

Thanks man! The kitchen is basically a closet, no windows, 1 door... its a chore to work with what I have got, but I had to start somewhere;)

Knowing the tucked in hidden location...I went into this knowing 3 things...
    1. The food had to be great, so people would talk about it.
    2. The name had to make you curious WTF is going on in there. lol
    3. Don't over price shit just because I am in a resort town. Make locals happy!

fucking awesome!!!!!! Can't wait to feed you guys

Awesome!! Look forward to feeding you!

    On a side note.....

I catered a breakfast event on Monday, we delivered to location. The guy was a TOTAL prick, and had to two girls in tears by the time they left. I was PISSED when I heard about this. I'm still pissed here on Wednesday morning. (He was not pissed about the food or anything like that, he was just stressed and "in a mood"....he did apologize to them when they returned to pick things up ) So......

I just called him to let him know that I would not be catering his planned event on Friday..... Due to his behavior on Monday, "you're and ass hole and I'd rather not deal with the headache"

I would have made about $700

    Am I wrong?

    neglect, mostly.
im with ya geoff. even though "the customer is always right", you have every right to chose who that customer is. . . . . but on the other side of the coin, is that loss of $700 really worth the "screw that guy" good feeling you're gonna get?

He did apologize and admitted his mistake. I get there should be consequences but I would have done it differently. What I would have done was fulfill my obligation to him for Friday and if he were to call again, politely decline the business if that's how you still feel.

How you handled it sort of makes you look like the bad guy. He can honestly say "I was having a bad day and took it out on X. When X came back, I apologized for my behavior. Then the caterer called and cancelled for Friday-now I have to scramble to find someone else.". Anyone he tells that story to might decide not to call you. Regardless of how good everything was.
