    I'm already looking forward to Thanksgiving, which is my own comfort food heaven. I'm racing that AM so I'll feel ok to eat some extra turkey. lol


    My dinner: I cooked up a rib-eye with a side of eggs over easy topped with roasted chilis. The rest of the steak will go on tomorrow's lunch salad.

    Big party at my house this Sunday. It is a Oktoberfest Food Bash. I will be smoking,grilling and roasting meat starting Thursday for Sunday.... check it out in the Northeast thread if any of you guys are in the Northeast.

    Not a chef, I like to have people over for fun. Everyone tells me I should start a blog. I have thought about opening a restaurant and or getting back into the kitchen. Just a thought though. I was in the kitchen industry for almost 15 years. I grew up in the kitchen and my grandparents had a catering business that I would help with. I have made it to the ranks of Head Chef and Executive Chef in many restaurants. On the other hand I also was a dishwasher and bus boy so I know most aspects of the kitchen so I would be a great owner as far as back of the house goes, the wife can pick up the front of the house stuff.

    not for me. my stepdad owned a restaurant, he was a chef. too much work for me. brutal. even opening up a food truck would be crazy. i know a girl that does it. out on the street selling is only half of her job. the prep before and afterwards would buckle me.

    what bums me out. i have a BFA in photography. i did documentary work. some ad stuff. the food industry never really existed like it does today.

    if i could do it all over again, i would be a food/travel photographer. i love food. family taught me how to cook it.

    I thought that you were in the industry. I was always taught to cook. The good thing about it is........... instant gratification for your efforts. I know that a food truck would probably be harder then a restaurant bc nothing would be at your hands once you leave.

    I am going to smoke 2 or 3 whole chickens this weekend and maybe 1 or 2 turkeys. I am def going to grill a turkey though.
