    tough: please more info on the roast! Is it pork tenderloin? (Sorry, I'm on my phone so pics are tiny.) I want to make this!


    I just made Turkey meatloaf. It's gluten-free and grain-free-- 2 lbs ground turkey, salt, pepper, an egg, garlic powder, chopped onion, chopped yellow bell peppers, couple splashes coconut aminos, a little salsa. Topped with tomato paste mixed w a some minced garlic and then baked. Easy food for the work week; had it for lunch w/steamed broccoli and steamed butternut squash, yay for a new working microwave in my work's kitchen.

    It was a bottom round roast beef.

    You have to show off your turkey meat loaf too by the way. I love meat loaf a lot.

    If that's mine, then you now know why that dish is made at least once a month at my house :)

    (The bonus is, I freeze roughly 1.5 cup portions of the soup in rubbermaid containers. One of those in my cooler keeps everything chilly most of the day, then is just thawed enough to nuke for lunch at the office. Win/win!)

    That is a good idea. I usually just freeze the whole thing. We always have chili or some kind of soup in the freezer. I like to bring leftovers too. Good idea

    I've always wondered about freezing chili and soup? I'm assuming its still good once you warm it back up?

    Yup.

    Depending on the water content, though, it can get freezerburn easily if you leave it in there too long.

    I don't usually have that problem, as after the day of cooking eating I usually only have 3 or 4 portions as leftovers, and that's gone in week, two tops.

    Yeah I was concerned about freezer burn as well. I do the same thing with soups and chilis for the week but since I can eat it all for leftovers within a week I just refrigerate it instead of freezing it.

    I wonder if it would be good in there even after a couple of months? Also, what do you freeze it in?.....zip lock bags?

    I have never had an issue. You def have to make sure it is in a sealed container. We usually forget about it then when you find it, its a nice surprise.

    Had lobster soup not too long ago, found it in the freezer and had it... so good.

    My family has an absolute addiction to a local Thai place. Once or twice a month, we get take out from there. The 'small' soup orders for each dinner come in a roughly 12 oz plastic container with a sealing lid.

    I save these, and use them for freezing and storing my soup. If one breaks, meh.
