    One of the Italian places I go to on occasion has an open kitchen. It's pretty busy and it's awesome to sit at the counter and watch those guys work. If it's not busy, they'll sometimes come chit-chat.

    Lots of eyes isn't a bad thing.

    well, it's a plus and minus. . . . you're (as in you the boss) aren't there and mr. minimum wage drops knife on the floor, picks it up and goes back to cutting up mr. customers food. well mr. customer sees it and lets anybody he's ever met know that at that restaurant they aren't clean, and he saw a lady doing this without a hat or hair net and this and that and this and that. . . it's simply a liability that hopefully draws in more people than detours.

    I started cooking in a open line kitchen here I didnt have an issue with it. However, my fuse is mush shorter these days, and can be worse then chef Ramsey! I should put a warning decal on the front door....but I wont charge extra for the show. I considered starting a web cam in the kitchen too :)

    Are there any online anger management classes?


    my god.....shits coming down to the wire here..........!!!!!!! i'm drowning
