Feelin like a dumbass but I'll continue with my amateur questions. Any way to absolutely tell if water got in the rear diff?

Only way to tell is to drain the fluid. If there is water mixed with the oil, it will look like chocolate milk. Otherwise, there's no real way to tell without looking at the oil itself. Changing the oil is a precaution after being stuck in water that deep for that long.

Pay $14 to change the fluid, or $1000 to change the third member when you grenade the rear end. Your choice.

And how much driving would it take to "grenade" the rear end? Are we talkin a few dozen or a few hundred? I'm going to change the fluid, just wondering.

Depends on the load your gears see and how much of your gear oil was displaced by the water. You should be fine driving to get it changed though.
