    Made some seafood roll-ups (Got the idea from Alton Brown's Good Eats)
    Salmon, tilapia and scallops.

    Broiled in the oven. Next time I will do it on the grill, but this was still great. Served with butternut squash and peas.

    Grilled ribeye and cauliflower. I also had green beans sauted with bacon and mushrooms with it, but forgot to take a picture of the plate :eek:

    Sadly, my wife and yout won't eat seafood that isn't shrimp. BUT, I promise you, I'm trying this talapia/salmon/scallop spiral trick the next time they aren't home.

    It is great. I like the flavor, and when you soak the plank in water, you can add apple juice, lemon juice, garlic etc. and it will infuse the flavor in the fish.
    It is also really easy since I always have the fish stick to my grill basket or foil, and with the plank it is easy to get it off.
    The only thing that I don't like is that the planks will take a lot of effort to clean and sanitize if you want to re-use them like in restaurants. Fortunately they are cheap enough to use once and then use as kindling for the next fire.

    The original recipe used salmon, flounder and scallops. I had fresh tilapia so I used it instead of the flounder.
    This is a winner that I will definately make again.

    We made bacon-wrapped turkey burgers for Memorial Day celebration.
    Grilled mushrooms and onions to top it, along with fresh tomatoe.

    While the grill was going, I also grilled/smoked baby back ribs and 2 pork loins, so along with left-over burger patties, we have food for the rest of the week's dinners, all ready to just heat up and pair with a quick veggie and/or salad.

    Made some dinner the other night. It is Gnudi all acqui al 2 (dua), which is basically ricotta cheese meatballs in fresh tomato sauce. For the gnudi, I sauteed up spinach in olive oil and garlic then added it to ricotta and parmesan with some flour to bind it. Form it into meatballs. For the sauce it was fresh tomatoes,seeded and chopped large. I sauteed the tomatoes in garlic olive oil and at the end added a huge handful of fresh basil. Once the sauce was done gently place the meatballs into the sauce, generously sprinkle parmesan cheese over the meatballs and throw it in a preheated 400# oven for 10 minutes or so to brown the meatballs.
