    OMG! So good! I'm stuffed! Decided to hold off and make them tonight as I had more time to cook.

    I went with my idea of adding in the sausage. Cooked the spinach, cooked the sausage and stuck everything in the fridge to cool. Mixed it all up with the cheeses and put it back in the fridge, made the cheese balls and stuck them back in the fridge. Keeping everything chilled seems to be the key to success other than the low moisture part.

    So, the wifey decided that we should try some new stuff at home tonight. She goes out and gets me a grill pan from BB&B, then stop sat the Boys (a giant, well known, well stocked, and thoroughly awesome farmers market type place) and dumps about 38 pounds of assorted fruits, veggies, meats, and lord only knows what else on the counter.

    Thinking quickly, I decide on home-made fajitas, and some stir-fry!

    Toss a half-pound of ground chuck with fajita seasoning, diced onions/peppers/garlic...I love fresh grated sharp cheddar and tangy sour cream...

    Bell peppers. Sweet onions & white onions. Fresh zucchini. Slice and dice the veggies, drizzle with decent olive oil and sprinkle on some kosher salt..... slice thin and long some fresh eye round scraps from my friend at the butcher, toss with fresh ground pepper, salt, and some Montreal steak seasoning...

    Here's my "naked raviolis"

    Ricotta, spinach and sausage balls over a bed of (gluten free) linguine
    So yummy and very filling. I made 1/2 the recipe and I think I'll be eating these for a couple of days!

    Tonight's dinner was a throw-together... and it was amazing!

    Chicken, bacon pieces, artichoke hearts, red onion, shredded carrot, shredded yellow squash, fresh mushrooms, udon noodles, sunflower kernels, & beer can chicken seasoning.

    Wish I made more!

    I made some more thrown-together dinner tonight, but instead of using the beer can chicken seasoning, I used Weber Smoky Mesquite seasoning. I over-seasoned trying to get that good smoky flavor, and didn't realize there are apparently red pepper flakes in there too. Needless to say it became a little overpowering....no worries, the rest is for lunch tomorrow!

    just made a hella-delicious, super-healthy i-talian (pronounced: i-talian here) dish:

    1 lb hot italian sausage (links)
    6-8 ounces chopped spinach
    8-10 ounces bell pepper blend (red, yellow, green)
    1 cup pasta sauce or 1 can diced tomatoes (your choice)
    4-6 ounces sliced onion
    1 can cannellini beans (white kidney)
    basil, dried red pepper flakes, fresh ground pepper, couple cloves minced garlic

    1. cook sausage links as directed (or simmer in water until firm ~20 minutes, drain water, pan sear to brown), remove from pan
    2. add olive oil in pan, heat to medium, add peppers, onion, and spinach, cook until soft or peppers/onions start to brown (slice sausage while this is happening)
    3. add sausage, tomatoes (or sauce), and beans (after drain and rinse) to pan, season to taste
    4. immediately turn pan to simmer for about 20 minutes, tossing occasionally, until water is cooked off
    5. turn off heat, cover with lid, let sit 10-20 minutes, toss and serve

    I have a nice dinner party going on Sunday. Smoking pork butt for pulled pork,smoking 2 briskets, making a grilled tomato and watermelon salad, making a sort of gazpacho, grilling steaks,and a leg of lamb. I am excited about this party,been a long time coming. Yes there will be pics to follow.

    I hate buying grocery store tomatoes. We go to local farmers markets pretty much all year 'round every weekend and get fresh/local whenever possible.

    Night and day difference.

    Nice. Drove 30 miles round trip to our butcher and picked up some smoked bacon. Can't wait to make some BLT wraps.
