    One of the very few up sides to living on America's Wang. There's fresh produce available pretty much all year 'round that's very local.

    That, and the seafood. :D

    Quick and dirty, sorry for the bad pic.

    Chicken Marsala for dinner.

    Ingredients
    1 tsp minced garlic
    1 tsp marjoram leaves
    1 tsp minced onions
    1/2 to 1 tsp black pepper (to taste)
    1 tsp basil leaves
    up to 1 tsp parsley, to garnish
    1 tsp salt
    1/3 cup AP flour
    around 1.5ish pounds chicken breasts
    3 tbsp butter
    2 tbsp olive oil
    8oz fresh sliced mushrooms
    1/2 cup chicken broth
    3/4 cup marsala wine

    Method

    1. Mix flour, garlic, marjoram, onions, salt and pepper in a shallow dish, like a paper plate. Reserve 1 tbsp for later use.

    2. Heat 2 tbsp butter and the olive oil in as big a non-stick as you have over medium-high heat. Use flour to coat chicken. I cut the chicken into smallish medallions...they cook faster, and more browning = more flavor. Cook until the juices run clear, however you cut the chicken. My small pieces was about 3 minutes per side to start browning nicely. Keep pieces warm until you've cooked them all up.

    3. Add fresh mushrooms to the pan once the chicken is all out. Cook them until they're VERY brown and tasty, about 6 mins with flipping frequently.

    4. Mix the reserved flour and spice mixture into the broth. Add to the pan along with the wine. Stir in the basil and the remaining 1 tbsp butter. Reduce for about 2-3 minutes or until the sauce just starts to thicken.

    5. Plate. Spoon sauce over chicken, add lots of mushrooms. Garnish with the parsley if you like.

    Note: I'm going to try with a couple different kinds of broth to make the pan sauce in the next couple tries, just for ha-has. Overall, fairly quick and easy to make, and REALLY darn tasty.

    I have already made the soup, which consists of tomatoes, olive oil, sherry, and apple cider vinegar. There has been no additional seasoning other then smoked paprika. The recipe actually asks for smoked olive oil which I did not find yet. I tasted it and it is a cold soup almost gazphaco but it is ran through a food processor. Hope it tastes good tomorrow.

    I am 4 hours into smoking a 6 lb pork shoulder. There is 2 hours to go and then I will pull it, depending on how it looks I will finish it off in the morning. I love smoking meat through the night.
