I'm sure this gets asked a lot but I'm trying to figure out how much offset would be equal to a 1.25" wheel spacer. I've looked all and can not seem to find the answer I am looking for.

This is a vague question and all depends on your current wheel size/offset and what you are trying to achieve? Are you trying to run larger tires on stock wheels? Larger tires (32, espec. 33's) on aftermarket wheels usually have a backspacing of 4.25-4.5" (offset of 0.) on an 8"wide wheel. 33's on stock rims will require 1.25" spacers to acheive the BS listed above to clear. Of course it will also require a lift of some sort along with some trimming and possibly a cab mount chop(depends on the stated variables)

I'm going with a 17x9" wheel and running 285/70/17 which I believe comes out to be about a 32 or 33.

Aftermarket wheel with a BS of 4.5" (0 offset) should work fine for that tire size. That should clear the UCA's and may need some minor plastic trimming at full lock, probably the front plastic behind bumper.
