    Deschutes is bomb. Had them for the first time a few months ago at a tap takeover. I also had the privilege of finding some Pliney the Elder last week. Had to ask the butcher at Whole Foods and I was only allowed three bottles. It was good but not sure what all the fuss is about.

    So the beer I made leaves me scratching my head and wincing with caution (read on) yet pleasantly surprised. Dead guy ale. Brewed...blah blah blah skip a bunch of details....left the beer ferment an extra 2 wks longer than I wanted to, did sugar prime for carbonation, bottled, let set. Two or 3 wks later beer had near zero carbonation. Flavor was good, nice color. Tonite I took one, pulled my knife (cuz its how I open my beers) and flipped the cap...as I have done a few times before. But this time the cap came popping off with the sound of a champagne bottle cork, striking me in the throat so sharply that my wife turned around and saw that my face was ghost white. I seriously thought it sliced my throat open and I was about to bleed to death in front of my family. Breathed when I realized it just left a big welt next to my adams apple. Good full head in the bottle but not fizzing over...at all. Tastes great, fizzy, kinda makes you wana giggle. Ok not really but its good. So to my head scratching....... why? Is it safe to even keep these bottles in the house? I popped a few more and they all went flying across the room. What is going on with muh ber?

    Temp range from 65 to 70. Dark basement, under a blanket to further reduce temp fluctuations.

    I am wondering/thinking that maybe letting it sit in the fermenter a few weeks longer than necessary ended up letting the yeast go dormant. Then when you sugared for bottle conditioning the yeast took a while to get active again. I usually force carb my beers in kegs so I am just going off of problems my buddies have had. It is safe to keep in the house though; no worries about that. As long as the beer is good I'd just drink it and chalk it up to learning.

    You should be fine. I've only had bottle actually explode...I guess the cap was on too tight.
