    not really smoking... well i am using my webber performer.... 225 over 8 hours.. with hickory wood chip adding as needed!! my uncle is a prof from the south and i use his dry rub and my wife makes up his bbq sauce!!! she is still sleeping... heehee... only takes an hour to make the sauce
