    I use a paper towel dipped in peanut oil to apply an uberthin layer of fat to my AllClad and go that route.

    If I'm not making a pan sauce, I'll use the cast iron.

    Oh, and FYI, I can't seem to find a link right now, but America's Test Kitchen steak frites was season 11 episode 17, you might find it online someplace that escapes me at the moment.

    Also check out season 8, ep 17, great strip steaks and garlic taters

    different. She's a bit skinny for my tastes, but she doesn't look completely clueless in the kitchen, so she has that going for her, which is nice.

    The wife and yout had a hankering for meatball parm subs.

    So, I took a couple pounds of ground sirloin and basically made mini not-much-seasoning burgers out of inch-sized handrolled meatballs and browned them up in a medium high skillet.

    Used the resulting hot pan and fat to cook up some rough diced sweet onion.

    Shredded some fresh mozz.

    And a trio of fresh baked hoagie rolls.

    Use some off the shelf marinara and...well, they turned out purty tasty. I had low expectations, as I've never really made them before.


    Hollowed out a channel on the top of the bread. Lay down a bunch of the cheese, cover in a hot layer of sauce to melt. Add the meat, top with more hot sauce and more cheese. Sprinkle on a generous helping of the onions.

    I like to cut me veg smaller cause I don't like raw onions and peppers and I like them smaller anyways lol. I forgot to get a finished pic but topped with the norm provolone cheese and pigged out!


    And my friends wife also made her bomb ass biscuits and gravy!

    Harvested my garlic this weekend. I think this is about as late in the season as we've let it go. Came out real nice with hardly any puny ones. Now I just have to wait the couple weeks for it to dry out :drool:
