    People are loving the food and I have had repeat customers!

    Im enjoying it very much, and the money making has been great. Maybe I can lift and get tires sooner then later! :)

    Neon...first of all - congrats on the new business plan. I wish you best of luck! I graduated from Bowling Green State University with a business degree in Hospitality Management. I have also worked in restaurants my entire life and enjoy cooking and pleasing people with food. I also love to eat - thats the Italian in me!

    I graduated in December 2001 (think about the market at that time - scary). I struggled to find a restaurant job and took a management position at an Applebee's (like you, I was really resisting corporate). I did it for 2 years before quiting due to the corporate bullshit. I left and blew the whistle on some people who were treating others poorly (and illegaly). It lead to an extensive investigation and our entire franchise (owned by 2 former Pittsburgh Steelers) was sold back to Apple International. Then I got out of the business. Wait...where was I going with this again :cool:

    Anyway, I'm jealous of your entrapenorial attitude and passion for the industry.

    Regarding your dream job, I go on a fishing trip once a year to the Redfish Lodge in Rockport, TX. The lodge holds a max of 18 guests and stays are 2 nights with 2 sit down dinners and some appetizers. The Chef, Chris, and his girlfriend have been the cooks for the lodge for years now. He spends the day getting the grocieries and cooks up dinner for all 18 people. He is not allowed to make the same thing twice throughout the year. He cuts up with the guests, occassionally hangs out at night (with his hot girlfriend) and gets paid VERY WELL!!! Anyway, it's similar to your dream job and I know he is loving what he does.

    Here is the meal he cooked the first night...the best lamb chops I have ever had!

    The second night was trout stuffed with a peanut butter stuffing mix and chocolate sauce. It was OK but very unique. Followed up with Flan was too much sweet for me.


    Sorry if I'm off topic...I had some time on my hands and enjoy talking about this stuff!
