    i have a paleo cookbook that has some good recipes in it - but i sorta make stuff up and add things to the dishes to make them more normal :eek:

    :eek: glad you guys got to the root of the issues! i've heard of people suffering for years and years. i had mostly digestive issues but no doctor ever put 2 and 2 together - i diagnosed myself! i had doctors put me on every medication for acid reflux but they never helped. and i had a host of other problems too. nothing i did ever really solved the problems, just lessened the symptoms a little. then i went GF, my health did a 180 in a matter of weeks and i never looked back.
    i think that the internet has helped a ton for identifying strange illnesses like celiac - of course there's the downside too when you have tons of folks who don't have anything wrong with them but they read something online and convince themselves that they're affected too.
    you should look for a book called "the gluten connection". the lady that wrote it gets a little over dramatic with "eat gluten and you'll die!" theories but its still pretty interesting. lots of stories from folks like your son. her main theory, which makes the most sense to me, as to why we're seeing such a dramatic increase in the number of gluten allergies and celiac is due to genetic engineering of wheat and other crops. wheat today is not like what was grown a century ago. we've engineered the wheat to be more drought resistant, insect resistant, etc. and what helps with all of that? gluten! wheat today contains an exponentially larger quantity of gluten than wheat normally should. we've messed with the basic make up of the foods much faster than our bodies can adapt to it. plus our lifestyles and diets tend to have us eating more grains than we used to. our bodies simply can't evolve/adapt that quickly. today the average person consumes more gluten before they get to kindergarten than a person at the turn of the century would have consumed in their entire lifetime.
    not only do I eat gluten free but I try to get as many non-GMO (genetically modified organism) foods as possible too.

    Also, as you said, the doctors just treat the symptoms, not the cause. Our doctor investigated everything to find the cause, not just treat the symptoms.

    i told my folks that we should go after the crappy doctors that they took me to as a kid. give them a rx and send them on their way....just too easy. my folks almost went broke trying to get me help! we demand a refund! :laugh: it wasn't until i had done a fair amount of research on gluten, went to a doctor, explained my history and asked if it could be gluten intolerance and how do i find out for sure that they said "oh, yeah. there's your problem right there!"

    like I said, she gets a little over dramatic.
    i've actually heard that real, fresh, italian pasta is nothing like what you see on grocery store shelves and that some folks with mild/moderate gluten intolerances can eat it without any problems. all because of the wheat they use over there. i'd hate to go all the way to italy and find out the hard way that i'm still bothered by it though :eek:
    never had catfish...not something you see in MT. have fun...post pics so we can tease you about your eating habits :D

    Some of my favorite things to get when I go out to eat down in Florida are fried catfish and alligator bites at restaurant out in the middle of nowhere in central Florida. Followed by buffalo wings at a bar named Froggers! I usually order a basket of 50 with a buddy of mine down there. So much yummmmm! :p

    I can second the 'missing Florida food' angle.

    Since moving to Oklahoma...I miss terribly having the best fresh seafood all year. I miss having locally-grown fresh fruits & veggies ALL YEAR. I miss imported cuisine from all over the planet fresh all year.

    Really, the food is the one thing I miss most about that third world shithole ego-hotel.

    I can't stand mayo! At my job we used to have a group called BAM. Brothers Against Mayonnaise. Whenever we'd go out for lunch and someone ordered a sandwich and said no mayo, someone else would yell BAM! I think I'm the only member left now [​IMG]

    Funny story...
    my ex mother in law was always a little bit clueless...well, more than a little. she would bring us lunch occasionally when we were finishing building our place. one day she had asked me if I like tuna fish sandwiches. i told her no and didn't think much of it. she already knew that I didn't like mayo on sandwiches - only butter. well the next day she shows up with like 6lbs of chicken salad sandwich mix and says that she made it because i didn't like tuna. :facepalm: the reason i don't like tuna is because it has mayo in it....and chicken salad has mayo in it!!!! she was not able to draw the conclusion that i just dont like mayo - no matter what you mix it with!
    Needless to say I was forced to make my own sammies from that day on :rolleyes:
