    Where are some good trails to run out here that aren't super hardcore? Unfortunately my truck is still stock :(

    There are tons of roads outside of town in any direction... lots of open space. Get some decent maps and just start exploring off of the highways. Get a feel for things. Do some internet research and check out some trip reports. Montana Mountain would be a good one for you, and there are miles of roads just south of there across Hwy 60.
