    I'm not much on chicken or green. My wife will get a roasted chicken from Sam's or the store and break it down into enchiladas and I'll have a few but I won't order it. I'm waiting for tamale season to kick loose. We can get them year round but women my wife works with will make up a slew of homemade tamales and lumpia around the holidays.

    Homemade made you're most likely to find lean(er). Restraunts not so much. Pork doesn't marble like beef so you can cut away more fat before you cook so you can get a leaner end product. But if you cut away too much fat then you cut the flavor. It's a fine line. That show "Taco Chronicles" really gives you a great in site on how they cook down there. I thought I understood it better than I really did.

    Tamales...........yeah I got a big sack of pork and beef and chicken homemade by the sales guy's mom - when I bought my Taco. Oh baby, da bomb! I was not expecting that!!

    A bunch of us at work didn't either. There's people who've lived their entire lives in this area and across the border in Sonora and never have. That's one thing I really appreciated about that show was what area all those foods originated. It explained alot about why certain regions in the border states have such different food. Of course once it's Americanized it really departs from it's origins and history.

    I too liked the regional explanations in the show (which is in Spanish). Heck, once Americanized, 90% of the lore is complete bullshit IMHO.

    Yeah no shit. I'm waiting for the paperwork and the guy says "Friday is Tamale day, would you like some?" Very interesting and neatly made. Meat set on the masa, some crema type cheese (small amount), then a couple strips of hotish green pepper - jalapeno or serano. The masa itself is tasty to me......

    Totally agree. What kills me is the cooking shows and chefs that make it "authentic"...total bullshit.

    yea i knew. he was Supv. at a furniture factory that made real hardwood furniture. we took it to a friend of his to have the finish put on. took all day. he would spray it and dry over and over. he had a walk in oven. at the end he took a big cotton rope unraveled on the end,dipped in black stain and speckled it.
