I installed a Pedal Commander on my 2021 Taco as there was significant delay's in the response from the gas pedal. I installed the Pedal Commander and 2 or 3 times since installation I have experienced the same problem. Pull out to pass someone and hit the gas pedal and NOTHING, had to pull back in and pump the pedal for a response. I know if I take it to the stealership they will tell me "we could not get it to do the same thing, bring it back if it does it again". Any other suggestions?

I'm not a fan of PC's or tunes. But if you must, get a quality tune.

Def don't take it to the dealer with it installed. You might have started the whole tune vs PC debate. I've had one for a while, was having issues, turned out it was a completely different issue. Got that fixed, seems to be working fine. Haven't had what you had. I will say this, there are more negative feedback from a PC as oppose to the tune. Maybe take it off, take it somewhere, see if there are any codes.

Ideally you should mostly ditch the PC in favor of a tune, only using the PC when in snow, ice sand or mud to deliberately retard the throttle response and avoid slipping.

You disconnected the battery when installing it, correct?

Ive heard issues about PC, check engine lights and other sort of problems , so I use an EVCx

Banks Throttle Monstor here for over a year. Works flawlessly, trans even shifts better after the learning curve, reverts to stock in reverse or if it fails and it’s the same price as PC.
The best alternative if you do not want a full tune.

The ECT button on will help with throttle response. I had a tune and hated it (KDmax) and went back to stock, but then I added a Sprint Booster (basically the same as a PC) and an “always on” ECT module (so it comes on by default without having to turn it on) and I have been happy for a few years like that. I know there are better tunes now, but KDMax was supposed to be “the fix” for all the previous tunes before that… until that was replaced by a new version… and another… and another… and then a new tune altogether by a different company… and then they put out a new version… and another… and so on for eternity. IMO, it never ends because they know most people are obsessed with the latest and greatest, and there is money to be made on them. That’s my opinion of tunes, but regardless, try turning the ECT button on with your PC and see if that does it for you. You may even need to dial the PC down a bit to find the sweet spot.
