    You know me, I hardly ever use a recipe unless I'm baking something. Tater salad was 5 eggs, 5 mediumish potatoes, half a small onion minced, mayo, Dijon mustard, yellow mustard, sugar, red wine vinegar, chives and S+P. I like mine "Amish style" which has that nice sweet and sour kick from the vinegar and sugar. Chicken thighs were just rubbed with some store bought BBQ rub and Montreal steak seasoning, crisped up on the grill then basted with sauce and finished in the oven.

    I have always started with cold water, bring it up to simmer and then just check them by taking one out and blowing on it. If it doesn't dry within about 5 seconds then they need a little more and done. This method has never failed for me.

    No mods whatsoever!
    My latest method:
    1. Place eggs in a large saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes.
    2. Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can be peeled and served immediately.

    I used to use methods like lots of y'all until I read Kenji's work over at Serious Eats. (the linked one)

    Since then, my boiled eggs are much more awesome. I've found exactly how I like them, and how to consistently cook them that way.

    And, it also makes other stuff I make WITH the boiled eggs much more consistent, which is a bonus

    Wow. I mean, I know I'm weird and all (most people don't view raw bell peppers as a snack food like I do) but...how can you hate on them? They're awesome regardless of the color.

    Don't get me wrong, I love my marinated artichoke hearts. But WTF.

    I also don't get the whole eating steamed ones and dipping the leaves in mayo or whatever. Rhetharded. So not worth it.
