I've seen some set up with 285's on stock TRD wheels and 3" lift. What size spacers would I have to run to avoid rubbing?

Hey brother and Welcome, just to point out that the search button is your friend. This is a question commonly answered and I am sure there are stickies for this type of question.

    Welcome

1" Bora or 1.25" Spidertrax will work

I used 1.25 spidertrax. Stock trd sport wheels, 285/70/17 and a 3" lift. No problems at all.

X2, except the TRD offroad 16" wheels (same specs). No issues for 3+yrs

So with a 3" lift i should be able to run 285/75/16s as long as run the 1.25 spacer and take off mud flaps and trim a little of the fenders? I dont off road hard but see some mud at the hunting camp.
