    What do you do with the pork belly? Is is basically uncured bacon? Do you just slice & eat? I don't like soft bacon so a slab of pork belly has an eyebrow raised over here.

    5.5 hours in. No foil, no sauce. Meat is 180, coming out of the stall quick. Another 45 minutes & they should be done.

    Looks tasty. I'm redoing the siding on the house this weekend which sucks because u really want to smoke something but I'm too focused on the reno. Maybe next weekend

    We put a simple rib on it. Little brown sugar mixed with other spices.

    And we just cut it into long slices and eat it. It's delish on its own.

    My advice on Pork/Boston butts, to cut down on time....buy 2 smaller ones instead of one big one. At our local grocery store (HEB) they sell 3-4 pounders with the bone in them.
