So my fuel tank skid plate on the 03 access cab rusted out and barely hanging on. I don't wheel. I don't intentionally offroad. Is there a readily available 1/2 to 1" plastic shroud that could be used to keep road debris away form tank and possibly protect the tank when coming off a curb that's out there? Like a thick cuttingboard material that'll flex and protect and not rot out in New England salt baths?

Currently I only have skids for the 05 and up. Once I get a new shop that is willing to cut UHMW for me I'll be expanding the lineup.

You could probably bend up a sheet of light aluminium if all you want is to protect the tank from road debris, but I would check the rear mounts for your current skid plate as it is bolted to the strap that holds the rear of the tank up and its likely pretty rusty as well. I just had mine break luckily I was close to home.
