Can someone tell me if I can use my stock 16" TRD OR rims on General Grabber AT2 LT285/75/R16 wheels? Since these are wider I wasn't sure if they would still fit right since the stock tires are 265. Thanks!

Not sure might need something 16x8 as that is a big tire.

Tire rack says the rim width for this tire is 7.5 - 9, so you should be OK. While they will fit on the wheel, they may rub on control arms because they are so much wider.

I do have 1.25" wheel spacers so I'm counting on those helping me out so I don't need new UCAs

Most people that run stock wheels and larger tires run spacers and are just fine.
