I'm loving my new vehicle but want to make it a little more off-road capable, and a bit more rugged looking.

Use it as a everyday driver, and for family camping, frequent mountain biking trips, ski trips to Tahoe, etc. I want maybe a slight lift, bigger tires, maybe smaller rims than the stock 18" and...not sure what else. I don't really go off-roading unless something I'm doing takes me there.

From reading lots of the forums here over the last few days it seems like a 3" lift with 285s could be a good way to go but ideally it would be a little less lifted.

I would just level it with Bilstein shocks and put some slightly aggressive all terrain tires on it. That'll change up the look to make it a little more aggressive and you'll get to keep a good ride, handling, and MPG

I'd also look into a different wheel option, unless you're dead set on 18 inch rims. The 4Runner TRD Pro wheels look amazing and really don't cost all that much.

Losing the "ground squeegee" will improve off-road capability and it costs no money. Increases the approach angle.

Yeah I wouldn't go larger than stock on tires ... will decrease the torque (acceleration), fuel economy and handling. Also be cautious with the tire selection. The more aggressive the tread typically the worse they are on pavement, road noise, handling/cornering/stopping, etc.
