I am lookin to get new wheels and tires and I've been looking at 265/70r17 tires but I would like to run 285/70r17 in the future. I wanted to know if you can you use the same wheel to run both these tires and if so what would be the pros and cons?

The stock wheel size was just under the approved/recommended size for the 285/75/r16 wranglers I'm running but I haven't had any problems so far. OEM rim width is 7" I believe and my tires recommended a 7.5" rim.

    Would a 17 x 8.5 be to wide then?

When you consider a brand of tire, the manuf. website will have a list of specs, including minimum, recommended, maximum wheel widths.

They are similar for the same size tire of course, but do vary sometimes from brand to brand.

Im not a 100% set on any tire. All I know is I want to get an All-Terrain tire. Ive been looking at terra grapplers, open countrys, and bfg all terrains for the most part. Any recommendations? I mostly do highway driving but I'm up in the snow a lot during the winter and do some minor off-roading here and there.

Then you should buy a good highway tire. Always pick your gear for how you use it 80% of the time, not the exception.

If you occasionally have planned off roading or snow adventures, a spare set of wheels with tires specific to that use, that you install before an 'event', will let you have the best of both worlds.

I can say this about the open country AT, they are great in the summer and wear is amazing but come the winter the rubber is a bit too hard at least for my liking

As stated previously, it depends on which tire you choose, so check the manufacturer's website for details. But I think you should be fine. For my Goodyear Wranglers, they recommend 7.5"-9" rim width for the 285 size.

Are you running spacers? I have 265's on stock Sport wheels and have like 1/4" clearance to my spindle.
