I have bilstein 5100s front and rear. I would like to take the adda leaf out since I now realize I never tow and would like the back to be a little lower. Will the 5100s rear shocks for without the adda leaf ? And if so is this a easy job to do with just jacks and basic tools including impact driver.

You'll need a couple C clamps and some basic tools, and an hour or so probably.

Rear shocks are fine without the AAL. Make sure you torque the U bolts.
