Siding Removal Question

    I plan on removing some poorly maintained wood siding and replacing with Celect siding from Royal. (I don't want to install over the old, I don't want to replace with wood).

    However, I don't want to replace soffit, fascia, or gutters at the moment. It appears that the siding goes underneath of the soffit. What techniques or tools are there to work around this? Could someone simply cut the siding just below the soffit with a toe kick saw, angle grinder, or multitool and install siding up to it?
