SoCal to NorCal trip: Tips on trails, sights, and local flavor?

    The girlfriend and I are planning on doing an 8-day trip from San Diego to Northern California (potentially as far as Redding) in my Tundra (build: http://instagram.com/spvrtan) around early August. Are there any solid trails (easy, moderate, or moderately hard -- Cleghorn bypasses were mostly easy/moderate for the truck) that we should hit on the way up? What about great scenery along the way (we're not sure if we're going to go up the West or East side of the state)? Any local interesting or unique things to do?

    Edit: As far as what I have on my truck (for trail capabilities and recommendations)..
    - BDS 7" drop-bracket lift with larger ICONs; CDC-valved remote reservoir coilovers (driver's side is still leaking); CDC-valved Omega shocks; no front spacers; no rear blocks (Atlas 4.5" expedition packs).
    - 37s (BFG KM2s) on 18s with Spidertrax spacers for ~4.5" wider track width; maybe upgraded 38s on 20s soon.
    - All-Pro sliders; potentially beefier White Knuckle sliders by then if they arrive in time.
    - TRD supercharger
    - Possibly have my BudBuilt transmission and transfer skids.
