Hope everyone had a good 4th

 

Foil. He is talking about foil.

As in, smoke them for 4-6 hours, then wrap them (and some put brown sugar or something on top then.)
Then you wrap them in foil to cook the rest of the time (either on the smoker or in the oven at 225).
You cant/shouldnt cook brisket the entire time exposed or you end up with dried out brisket.

As for an initial rub, some like a rub with salt/pepper/paprika/garlic/onion/chili powder etc.

Others say just salt and pepper.

Some who competitively cook say nothing at all.

 

3rd of July lunch, the pig was still roasting in pig box (a/k/a Mexican Microwave).
This was for a HASH party outside 8th Wonder.

I went for a motorscooter ride on Monday, saw more vulture activity on the road than is in here.
