    I've made it before by sprinkling jalapeño powder on it while cooking, no salt in it or anything, just ground jalapeños.

    I buy it at the Walmart market, it's actually pretty good for store bought pre-packaged bacon but I tend to like deli fresh sliced thick bacon instead. When I lived in Tucson I used to get jalapeno bacon from Dickmans Deli. Since you live in Az, I'm sure you could go to any local carnaceria and find some jalapeno bacon.

    Mom and I had a very heated debate about bacon cooking last week. She likes her bacon room temperature compared to my crispy bacon. She was freaking out trying to take all of the bacon off the grill and I was screaming to leave mine alone. I don't think she'll trust me to cook bacon ever again.

    Anyone here cure and smoke their own bacon from raw pork belly? I've done 6-7 full bellies so far and been very successful. Surprisingly, curing bacon at home is a lot easier than you might think. It tastes fantastic, you can slice it as thin or thick as you want, and experiment with additional seasonings. I've got a full belly that will be quartered to fit in gallon Ziploc bags and begin the 10 day cure tomorrow.

    Regarding cooking, I agree that oven baked bacon is great but almost always fry it in a large skillet. The key is to fry it low and slow so that the fat renders but the strips do not curl and/or burn. Regular rotating and rearranging helps all pieces to finish perfectly at the same time.

    I prefer my bacon chewy, but my wife likes it crispy. We are always debating which is the best. I won't show her this thread because crispy is ahead in the poll. Either way, BACON BACON BACON!!!!!!
