Just build this platform for my wife and dogs to sleep on while camping (I use a hammock), any ideas to create a cross-breeze to pull out the inevitable heat and humidity? I'm thinking about cracking the windows and rigging up a small battery powered fan in the front sliding window?

    a bunch of new/used parts....and some skids.
If you're ok with cutting, @Crom put a fancy vent on his topper.

Ive found cracking the windows to be pretty efficient at controlling condensation. but I wasn't camping in the summer. it was usually below freezing when we were out with the two of us and our dog. the only downside is if it rains and you need to close everything up. then it can get moist in there haha

I put a custom vent in the center of the roof to allow heat to escape at the apex. It dramatically reduced temperature back there.

In your case OP, a fan placed in the center window, and opening the sides, should do the trick nicely, I would think.
