    I think we stay on topic pretty well...

    This guy did a killer write-up, so I won't re-type it. I remember reading this page a few years ago and thinking "man, that's intimidating!" It's really not. Once you get into making bacon, buckboard bacon, Canadian bacon, you start looking for other cured meats to attempt.

    10lb Select packer. Salt & pepper only. Wrapped in paper at 170. Took it off at 200. Rested down to 140. Perfect as always. This was my first delivery ever. My cousin wanted one for his birthday..so I made it this morning and took it over.

    Picked up a 12lb choice packer today, 2 pack St. Louis ribs, an 8 pound ham, and a 6 lb honey ham. Add that to some baby backs, pork loin, tenderloin, and two butts. Got some smoking to do in the coming weeks. Doing some tenderloin, ribs, and chops, at the request of the wife, tomorrow. Will eat it all week then.

    Hell, that's getting speedy around here. Almost $4.00lb. Chicken has gone stupid despite the countless processing plants locally. Pork, thankfully is still decent.
