Would it be the water pump it it doesn't overheat all the time?

    Too few to list.
Check for leaks around the water pump. Depending on your use and location, it doesn't necessarily overheat all the time. BTW, welcome to the site.

Yeah likely the water pump, but first - did you bleed the cooling system after you replaced the thermostat?

If you still hear a water sound inside the cab, there's air in the cooling system which will cause an overheat. The system needs to be "burped".
Old thermostat can also be boiled to see if it opens.

I would check the simple stuff first before jumping to the head gasket. That's the last thing you'd want.

Most likely the heater core is air bound. Needs to be "Burped" of trapped air. Check your radiator hoses and heater hoses, see which ones are warmer when at operating temp. If the heater hoses are cold, it's more then likely air bound.

It could be. Lots of good opinions here esp with the burping of the coolant system to remove trapped air. I was under the impression that it was always overheating from your original post.
