    Next time I'm doing a dry brine, injection, and rub for the butt. Lol

    I figured the dry brine would help the rub penetrate into the meat more, but that wasn't the case. I mean, the outside was amazing but the core lacked something.

    Maybe I'm being overly critical? Or maybe I just want to try something new.

    nope. I fully agree. it does wonders for the turkeys we fry! I always make sure when im freezing the smoked butts that little of the bark gets in each of the freezer packs so that the flavor of that get into the rest of the meat.
