It isn't a particularly complicated shape to fabricate. Start by making an inverted plywood version of it, then wax the plywood box nice and thick, smooth/shape the wax as needed, spray in a good thick layer of gelcoat (tinted to your specifications, or clear), lay down NICE AND THICK fiberglass or carbon fiber, pour/roller/etc. on the resin, let it harden, and then... this is the important part... lay down some CARDBOARD TUBES (like gift wrap tubes) along areas that need to be reinforced, and another layer of fiberglass over the tubes. That will give it some rigidity so that it doesn't flop around when you get up to highway speed. Once its all hardened up, pop it out of the mould and bolt it on to the bed rails.

Of course the problem is that you won't be able to see through it. As an alternative, you could build it out of plexiglass, but this will take a lot more skill since everything has to be cut and melted together perfectly whereas the fiberglass version gives you the flexibility of being able to reshape the wax before committing to a final configuration.

For an in-between approach, you could make spaces for windows in it. Just make sure to account for this when glassing on your cardboard tubes. The way I would do this, is to use 1/4" plywood strips to outline the edges of the windows before glassing it, this way when you pop it out of the mould, you will have a 1/4" inset where you can put down the plexiglass on the outside without it protruding and impacting aerodynamics. To attach the plexiglass, lay down a bead of silicon, stick it down, and countersink bolts to hold it together. You would probably want to do 4 windows; front, back, and two sides.

Now for bonus points, you might want to think about a hinge mechanism to allow you to open the thing without completely removing it. You can't just put a hinge at the front of the rails since the top corner will then hit the cab. Maybe a hinge at the top edge of the cab?
